Eggless Nog

Eggnog is a classic holiday drink, and it can be made using whole plant foods. In our recipe, cashews, dates, spices, and your choice of liquor (if desired) are blended into a tasty concoction that is perfect for get-togethers with loved ones.   • 4 cups water
  • 2 cups cashews, raw
  • 6 Medjool dates, pitted
  • 1/2 cinnamon stick
  • 1/4 vanilla pod seeds
  • 2 tablespoons liquor (e.g. bourbon, brandy, rum, whiskey) (optional)
  • 1 1/2 teaspoon nutmeg, freshly grated
  • 1/4 teaspoon cloves, ground (optional)

  • Serves 6


  1. Soak cashews in water overnight.
  2. Drain and rinse cashews, then transfer to high-speed blender along with water, dates, cinnamon, seeds from 1/4 vanilla pod, nutmeg, cloves (if using), and liquor (if desired).
  3. Blend until smooth. For an even smoother consistency, strain through a fine-mesh sieve.
  4. Transfer to a glass jar and refrigerate up to one week. Serve chilled.
