Sweet Potato Hash
It is time to invite sweet potatoes to your breakfast table with our mouth-watering Sweet Potato Hash. This recipe uses all plant-based ingredients, including sweet potatoes, roasted garlic, onion, green pepper and jalapeño, then kicked up with a combination of Italian seasoning and freshly ground black pepper. The mix of sweet and heat is sure to wake up your taste buds in the morning.
Ingredients
- 1 cup onion, coarsely chopped
- 1 clove Roasted Garlic
- 1/2 large sweet potato, washed and diced into 1/4″-inch cubes
- 1/2 jalapeño pepper, minced (remove seeds for less heat)
- 1/4 green pepper, coarsely chopped
- 1/2 teaspoon Italian seasoning
- Dash freshly ground black pepper
Directions
- Bring water to boil then add diced sweet potato.
- Boil 5-8 minutes until cooked, then drain water and set aside.
- Preheat heavy-bottom skillet on medium heat then add onions and peppers, sautéing until the onion is translucent. If sticking or burning occurs, add water or vegetable broth.
- Add sweet potato, roasted garlic, Italian seasoning and black pepper.
- Continue cooking until ingredients have browned, adding a little water as needed.
