Super Bowl

Ingredients

  • Chia Pudding
  • 2 cups Homemade Nut Milk or store-bought plant-based milk
  • 1/4 cup chia seeds
  • 1/4 cup dates, pitted, chopped
  • 1/2 teaspoon cinnamon, ground
  • 1/4 teaspoon cardamom, ground
  • Mango Cream
  • 1 cup mango, cubes
  • 1/4 cup cashews, raw, soaked overnight
  • 1/4 teaspoon ginger, fresh
  • Red Berries Cream
  • 1 cup red berries
  • 1/4 cup cashews, raw, soaked overnight
  • 6 basil leaves
  • Toppings
  • Cocoa nibs
  • Coconut, unsweetened, shaved, toasted
  • Goji berries
  • Pumpkin seeds

Directions

  1. Blend chia pudding ingredients and refrigerate until cold.
  2. Blend mango cream ingredients and refrigerate until cold.
  3. Blend red berries cream ingredients and refrigerated until cold.
  4. Arrange chia pudding in the center of a bowl, and add the mango and red berries creams to the sides.
  5. Top bowl with cocoa nibs, toasted coconut, goji berries, and pumpkin seeds.
