Raspberries ‘N Cream
Our Raspberries ‘N Cream is a stunning dessert with just three simple ingredients. The recipe starts by whipping up a batch of Fran Costigan’s dairy-free Basic Thick Cashew Cream, which can be prepared ahead of time and refrigerated. After that, it is just a matter of layering the cream with fresh raspberries (we recommend using a clear glass for a beautiful presentation!) The dessert is topped with chopped pistachios which provides a nutty taste and crunchy texture that really completes the dish. If there was ever such a thing as summer on a spoon, this is it!
Ingredients
- 2 cups raspberries, fresh
- 1 cup Basic Thick Cashew Cream
- 1/3 cup pistachios, chopped (optional)
Directions
- Prepare Basic Thick Cashew Cream.
- Layer raspberries and cream in small glasses. Top with chopped pistachios and/or additional raspberries.
