After just one bite, you will understand why these are called Magical Cookies! The recipe comes from the R & R Bakery and Coffee Shoppe in Marshall, Texas and was featured on Season 1 Episode 13 of the online television show Healthy Living With Chef AJ. The cookies are made without sugar, salt, oil, or eggs; instead, they are prepared with whole plant ingredients such as unsweetened applesauce, peanut butter and cherries, oats, dairy-free chocolate chips, and cinnamon. You will be delighted to serve your family and friends such an incredibly yummy treat!
6 cups oats
2 3/4 cup applesauce, unsweetened
1 3/4 cup chocolate chips, dairy-free
1 3/4 cup peanut butter, unsweetened, unsalted
1 1/2 cups cherries, dried, unsweetened
1 tablespoon vanilla extract, alcohol-free
1 1/2 teaspoon cinnamon
Preheat the oven to 350°F.
Mix all ingredients in a large bowl.
Using a large cookie scoop, place batter on cookie sheet lined with Silpat or a non-stick silicone baking mat, then flatten with your hand.
Bake 15 minutes, flip, then bake for an additional 15 minutes.
Remove cookies from sheet and cool slightly before serving.
