Pear Whipped Cream

Whipped cream is a yummy addition to many baked desserts, but it is typically made with dairy and lots of sugar. Here Chef AJ teaches you how to make a more healthful version using pears and a couple other simple ingredients. Enjoy a dollop on The World’s Healthiest Apple Pie or your other favorite plant-based desserts.


  • 1/3 cup raw cashews
  • 1 (28 ounce) jar of pears in their own juice
  • 1 tablespoon alcohol-free pure vanilla extract
  • 1 teaspoon xanthan gum
  • COOK TIME 20
  • Serves 4


  1. Drain pears and reserve juice for another use.
  2. In a blender, blend pears until smooth.
  3. Add remaining ingredients and blend until incorporated.
  4. Chill. Serve over fruit desserts.

Note: Substitute unsweetened jarred peaches in their own juice for the pears.
