Build-Me-Up Breakfast Bowl

This simple recipe starts with a base of sweet potato, banana, and cinnamon, to which you can add your choice of toppings like berries, nuts, and seeds. To make prep even quicker, use a leftover sweet potato from last night’s dinner and this hot breakfast will be ready in minutes. Ingredients

  • 1–2 sweet potatoes, whole
  • 1/2 banana, mashed
  • Cinnamon, to taste
  • Optional Toppings: blueberries, raisins, chia seeds, flaxseed, nuts, nut butter, maple syrup
  • PREP TIME 5
  • COOK TIME 50-60
  • Serves 2

Directions

  1. Preheat oven to 400°F.
  2. Poke sweet potatoes several times with fork, then bake 50–60 minutes or until fork can easily pierce the center.
  3. Mash sweet potato and banana, then mix with cinnamon.
  4. Top with desired berries, nuts, and seeds. Serve.
