You may think of salads as a ‘summer thing.’ The truth is that fresh produce is available all year round, and you can celebrate any season with a different flavor combination each and every month. Our Avocado Citrus Salad is a tribute to winter because it features cold weather produce including avocado, grapefruit, arugula and fennel. The dressing is a simple Dijon Vinaigrette, which accents the fruit and veggies without overpowering them.
In a small bowl, whisk together Dijon Vinaigrette ingredients.
In a large bowl, add all salad ingredients. Drizzle with Dijon Vinaigrette and toss to coat. Serve.
