Avocado Citrus Salad

You may think of salads as a ‘summer thing.’ The truth is that fresh produce is available all year round, and you can celebrate any season with a different flavor combination each and every month. Our Avocado Citrus Salad is a tribute to winter because it features cold weather produce including avocado, grapefruit, arugula and fennel. The dressing is a simple Dijon Vinaigrette, which accents the fruit and veggies without overpowering them.

Ingredients

  • Salad
  • 2 cups grapefruit, peeled, segmented
  • 2 cups oranges, peeled, segmented
  • 1 cup arugula
  • 1 cup avocado, peeled, pitted, chopped
  • 1 cup fennel, halved, thinly sliced (optional)
  • 2 tablespoons almonds, slivered, toasted (optional)
  • Dijon Vinaigrette
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • Black pepper, freshly ground, to taste

Directions

  1. In a small bowl, whisk together Dijon Vinaigrette ingredients.
  2. In a large bowl, add all salad ingredients. Drizzle with Dijon Vinaigrette and toss to coat. Serve.
