10 Plant-Based Dishes as Vibrant as Spring Itself

Spring is just around the corner!

And with it, fragrant flowers, chirping birds, buzzing bees, and colorful, fresh produce.

chopped green onionsSpring starts with the Vernal Equinox, which is when the sun is exactly above the equator.

This typically occurs on March 21st.  However, in 2019, spring will begin at 2:58pm PST on March 20.

And while that date marks spring in the northern hemisphere, it is actually the start of fall in the southern hemisphere.

As we said in an earlier blog post, we like to think of it as “while one side of the earth is planting, the other side is harvesting.”

In 2017, we commemorated spring with a list of 10 plant-based recipes featuring spring produce, including asparagus, artichokes, peas, broccoli, leeks, radishes, carrots and more.

This year we honor the season with a different set of recipes that capture the ‘spirit’ of spring.
