Spicy Lentil Tacos

Our Spicy Lentil Tacos are a simple weeknight meal that is packed with authentic Mexican flavor. The base of this taco filler is brown rice and lentils. After cooking, these grains are seasoned with spices like chili powder, onion powder, red pepper flakes, paprika, and cumin. This taste explosion is complemented by all of your favorite taco toppings, including salsa, guacamole, tomatoes, lettuce, and onions. Sounds like it is time for Taco Night at your house!

Ingredients

  • 5 cups water
  • 1 cup onion, diced
  • 1 cup lentils, uncooked
  • 1/2 cup brown rice, uncooked
  • 2-3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes
  • Freshly ground black pepper
  • PREP TIME 10
  • COOK TIME 50
  • Serves 6-8

Directions

  1. In a large pot, sauté onion and garlic over medium heat, adding a drop or two of water if needed.
  2. Add all remaining ingredients. Stir and simmer uncovered over medium-high heat. Stir often and turn off heat when rice and lentils are cooked.
  3. Use as filler for hard or soft tacos, topping with your choice of fresh, plant-based ingredients.
