- Skin and seed avocado and add to a bowl. Lightly mash avocado so it still has a chunky texture.
- Add 1/2 cup of blended Rainbow Salsa, lime juice and zest, crushed peppercorns and cilantro to the avocados.
- Fold in 1/2 cup of Rainbow Salsa. Add salt to taste and mix until guacamole becomes desired smoothness.
Note: You can adjust the spiciness of the guacamole by adding in 1/4 of a jalapeno pepper with the blended Rainbow Salsa.
