Breakfast Crepes With Berry Bliss Sauce

Our Breakfast Crepes are light and airy, using just a few plant-based ingredients and no salt, oil or refined sugar. Remain patient while cooking, as they are best tackled one crepe at a time and flipping can be challenging. However, your efforts are rewarded in the end as you sit down to a wholesome and delicious French breakfast that you prepared in your very own kitchen. These crepes are great when filled with fresh fruit, but we also offer a naturally sweet Berry Bliss Sauce as a topping, prepared in 10 quick minutes using only fresh/frozen berries and orange juice…or try our recipe for Chocolate Hazelnut Spread. While we present this as a ‘breakfast’ recipe, you can also enjoy these crepes for dessert or as an entrée at lunch or dinner by filling them with vegetables and other savory ingredients.

Ingredients

  • Crepes
  • 1 1/2 cups Homemade Nut Milk
  • 1 1/2 cups whole wheat pastry flour
  • 3 tablespoons sucanat
  • 1 tablespoon applesauce
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract (optional)
  • Berry Bliss Sauce
  • 1 1/2 cups berries, fresh or frozen
  • 1 1/2 tablespoons orange juice

Directions

Crepes

  1. In a small bowl, mix all ingredients.
  2. Place a non-stick skillet over medium high heat.
  3. Once the skillet has come to temperature, add 3 tablespoons of batter with a ladle, twirling the pan around to make a thin circle.
  4. Cook the crepe for 1-2 minutes, or until it begins to cook on the underside and the batter gets darker in color.
  5. Use a knife to loosen the edges, then flip and cook one additional minute.
  6. Remove from griddle and continue with the rest of the batter.

Berry Bliss Sauce

  1. Add ingredients to a saucepan and place over medium heat until bubbling.
  2. Reduce heat to medium-low. Use a wooden spoon to mash up the berries then simmer for 10-12 minutes, mashing occasionally as desired.
  3. Transfer to a glass jar or container and let cool.
  4. Store in refrigerator. Reheat before serving.
