Apple Cinnamon Mug Cake

Ingredients

  • 1 apple, chopped
  • 3 tablespoons whole wheat or gluten-free flour
  • 1 tablespoon sucanat
  • 1 tablespoon applesauce
  • 1 tablespoon Homemade Nut Milk or store-bought plant-based milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon nutmeg (optional)

Directions

  1. To a blender, add half of the chopped apple, applesauce, nut milk, lemon juice, and vanilla. Blend until smooth.
  2. Add flour, sucanat, cinnamon and baking powder to small bowl. Stir in blended ingredients and other half of chopped apple and mix until combined.
  3. Pour into mug and microwave for 1 minute. Add time in 15-second increments if needed, checking for doneness each time. Serve hot.
